Okay, so the previous prototype of this
cheesecake went over surprisingly well with my co-workers, but I was
still very unhappy with the batter's excessively soft texture. I had an
anxious quest to redo this one with much more stability. And that's what
I did less than two weeks later, around the beginning of May
2025.

but boost the batter's xanthan gum to two teaspoons.
Now that's more like it!
I brought this one to a "potluck" lunch at my church, Living Hope. There wasn't a big crowd there,
but a few slices did get taken and seemed to be well-received. I took
home the rest and gave some of it out to others.
I had given some thought to bumping up the xanthan gum a little bit
more—just 1/4 of a teaspoon—for next time, due to some
slice tip wilting issues (I still wanted to make sure that I would
not run into any rubbery results elsewhere).
